I don't really know what went wrong with the cake, I used the lightest and finest flour that you can get here and sifted it twice together with the starch. Maybe I wasn't gentle enough when mixing in the flour and oil and overdid it. <br /><br />We don't have the Alpro whipping cream. I'll maybe try the brand that is available here with some cream stiff. I'm not sure but maybe different the brands of flours behave differently. And I think this boiling the cream with agar thing doesn't work with every brand, at least mine was ruined by this process... I like the idea of this cake so I'll maybe try it with a different sponge cake recipe.
